What infrastructure is required to grow from 95,000 lbs of dry sausage (pepperoni) per week to 500,000 lbs per week?  This was the question presented by EZZO Sausage Company to Structura.

Structura has the necessary experience to evaluate client’s production goals within global industry standards.  We evaluated existing EZZO properties for expansion potential and weighed the output against the benefits of greenfield construction.  We also evaluated their process, process equipment, and utility demands to determine the best overall equipment performance characteristics necessary to meet their goals.  We provided a phased construction analysis in order to meet project budgets and included commissioning options, and move- management strategies to help ease the transition into their new environment.
